Chef Dede Trotter
Hi, my name is Dede Trotter, and I founded Culinary Dreams, Inc. in 2007. Culinary Dreams actually began percolating in my mind as early as the mid-1980’s. As the wife of a minister, and always feeling a bit intimidated about what to bring to the next “pot luck” dinner, I sometimes found myself a “nervous wreck” about my own cooking. Needing to turn my “cooking nightmares” into “culinary dreams,” I embarked on a journey of culinary education, enjoyment, and encouragement to find a way to make a difference in my own life, in the life of my family, and to benefit my community.
In the early 2000’s, I began working in the food services industry in various aspects, such as managing a restaurant, marketing for another restaurant, and concurrently being a chef and caterer at a banquet center. Also during these busy days in my life, I added to my Bachelor of Arts in Communication by rounding out my education with an Associate’s Degree in Applied Science in the Culinary Arts and the business plan for Culinary Dreams began to take shape. Currently, I am a Certified Culinarian through the American Culinary Federation.
Throughout these last few years, it has become increasingly clear to me that I was not the only one who has dealt with apprehension about cooking. The more I learned about various foods, and understood why certain recipes work better than others, and had some success in putting together my own recipes, I began to sense that “now is the time” to share, in many ways, my life with others through the Culinary Arts. My heart’s desire is to truly cultivate a “hunger” in people, especially children and students, to find their place in the kitchen. I want to encourage others to find the same sense of enjoyment and confidence in cooking that I have found in the kitchen—to not be afraid to try recipes, to explore food combinations, and to expand their palette.
To that end, Culinary Dreams now exists. I hope that you will give a culinary class a try. Whether you are a proficient chef, or you’ve never set foot in a kitchen before, I believe that the classes I will offer will be fun, informational, and encouraging. Through my life’s experiences, my motto has truly become: “Turning cooking nightmares into culinary dreams!” And by the way, at these classes, we will use the freshest ingredients, much of it grown locally in Baldwin County. I look forward to seeing you at Culinary Dreams soon!

Culinary Dreams was formerly located in the Fountain Square Shopping Center. Chef Dede is now traveling to the various locations where cooking classes are being held. She also is available for Private In-Home Meal Preparation.
Frank has been a full-time minister for 25 years, and is now enjoying the opportunity to wash dishes and do administrative things with Culinary Dreams. He and Dede have 3 sons, and have been married 32 years. One of his favorite things about being a part of Culinary Dreams is the opportunity he gets to meet so many interesting Baldwin County residents.
